Homemade Paneer Kolhapuri Recipe

Serves: 4 Persons




3 Tablespoon Oil

250 Gms Cottage Cheese (Paneer)

1 Cup Hot Water

2 Cups Fresh Tomatoes Blanched and Pureed

¾ Cup Onion Chopped Into Julienne

6 Whole Dry Red Kashmiri Red Chilies

2 Tablespoon Coriander Seed

2.5 Tablespoon Desiccated Coconut

1 Tablespoon Fennel Seed

1.5 Tablespoon Cumin Seed + 1 Tbsp Cumin Seed For Tempering Curry

4 Stone Flowers (Dagadphool)

5 Green Cardamoms

2 Tablespoon Poppy Seed (Khuskhus)

6 To 7 Peanuts (Optional)

A Pinch  Nutmeg Powder

2.5 Tablespoon Ginger Garlic Paste

1 Tablespoon Turmeric Powder

1 Tablespoon Kashmiri Red Chili Powder

1 Cup Water

1 Teaspoon Mustard Seed

1 Tablespoon Goda Masala

1 Teaspoon Garam Masala

Salt as Per Taste

½ Cup Chopped Coriander Leaves


Paneer Kohlapuri Recipe Step1

Take paneer and cut into small cubes. Shallow fry the paneer cubes for 2 minutes. Don't allow them to get brown.

Immediately put these fried paneer into hot water for 3 minutes. Then strain the water and place them on absorbent napkins.

Take oil in a frying pan on medium heat. Once oil is hot shallow fry the onion until brown in color. Add little salt and sugar for onions to caramelize faster. Grind these fried onions into a smooth puree and place aside.

Dry roast coriander seed, fennel seed, cumin seed, dry coconut, dry red chilies, stone flower, peanuts if using and poppy seed for 2 minutes. Blend this roasted mixture with little water into a smooth paste. Keep it aside.

Take a wide bottomed pan and add oil. Once oil is hot add cumin seed and mustard seed.

Once they crackle add ginger-garlic paste and sauté until the raw smell disappears.

Add the grounded roasted paste. Sauté and Stir it continuously for 2 minutes.

Once the paste starts leaving oil then adds the blanched tomato puree. Cook for 2 to 3 minutes and stir it occasionally.

Add all above spices turmeric and salt. Cook until the gravy is cooked.

Add paneer cubes, coriander leaves and sprinkle nutmeg powder. Cook for another 4 Minutes. Check the taste and alter any spices if required. Serve hot with rice, Butter Kulcha Or rotis.
