Eggless Pineapple Pastry Recipe

For the cake:

2 Cup Flour

2 1/2 Teaspoon Baking Powder

1/2 Cup Butter

1 1/2 Cup Sugar, Powdered

1/2 Water

3/4 Cup Yogurt

1 Teaspoon Vanilla Essence

1/4 Teaspoon Salt

For Layer:

1 Cup Pineapples, Finely Chopped

3 Tablespoon Pineapple Juice/Syrup

3 Cup Cream, Chilled

1/4 Cup Sugar

Cherries and Pineapple Slices for Garnish


For the cake: 

Sieve the flour, salt, powdered sugar and baking powder in a mixing bowl.

 Mix butter, water and vanilla extract.  Whisk the mixture using a wooden spoon till well blended.  Put yogurt to the cake batter and Give it a quick beat till smooth and looks glossy. 

Transfer the batter into the greased tins. 

Put in preheated oven to bake around 20-25 minutes at 160 degree Celsius. 

Eggless Pinapple Pastry Reclpe

For layering:

 Beat the cream with the sugar, till it holds its shape. Be careful not to over beat, as it will turn into butter. 

Place one layer on the plate upside down. a layer of cream over this and arrange the chopped pineapple over it in a layer.  Make and cover with the second layer.

Sprinkle with the Pineapple syrup. 

Now cover properly with whipped cream. Decorate cake with the pineapple slice and cherries, chill and serve.
