1 Cup Roasted Peanuts
4 Teaspoons Ginger, Chopped
2 Teaspoons Garlic, Finely Minced
2 Small Fresh Hot Red Chilies, Each About 2 Inches Long
½ Teaspoon Turmeric
2 Teaspoons Red Chili Powder
1 Teaspoon Cumin
4 Teaspoons Coriander
Salt as per Taste
2 Tablespoons Sugar
1 Teaspoon Garam Masala
2 Tablespoons Cooking Oil
9 Small Red Potatoes
16 Small Onions
6 Small, Thin, Light Purple Chinese-Style Eggplants
1 ¼ Cups Coriander, Chopped
Blend peanuts, ginger, garlic and chilies with help of mixer and make Fine powder as possible.
Mix turmeric, red pepper, cumin, coriander, salt, sugar, garam masala and oil in prepared fine powder with hand.
Cut potatoes. But careful about cut portion can be opened slightly to provide space for stuffing. Fill the stuffing in it.
Peel onions. Cut each, slicing down with a knife almost but not quite through to the bottom. Give each onion a quarter turn and slice in similar fashion. Open up onions and stuff with spice mixture.
Cut eggplant crosswise in half. Fill halves with stuffing.
Steam this stuffed vegetables to cook for 15-20 Minutes.
After that take a pan and pour oil in it. Put steamed stuffed vegetables and remaining stuffing in it. Stir it carefully.
Let cook over low heat for 2-3 minutes. Sprinkle coriander and serve it.
You can use other vegetables also like bhinda, Capsicum, Tindora etc.
