Crispy South Indian Medu Vada Recipe

Serves - 4 person

Preparing Time - 240 Min.

Cooking Time - 40 Min

INGREDIENTS for Medu Vada:

2 Cups Split Black Gram (Urad Dal)

1 Teaspoon Cumin Seeds

1 Teaspoon Ground Black Pepper

1 Tablespoon Grated Fresh Coconut

1 Medium Onion, Finely Chopped

5 Curry Leaves, Finely Chopped

1 Tablespoon Coriander, Finely Chopped

1 Teaspoon Baking powder

1 Teaspoon Salt

1 Tablespoon Green chilies and Ginger, Finely Chopped

Oil for Deep Frying

Water if needed to make Batter

Initial Step of Medu vada

Method for Medu Vada:

  • Soak the urad dal for 4 hours or Overnight.
  • After Take mixture jar and grind the soaked dal to the smooth batter with little water.

Medu Vada

  • Put this batter in large bowl and add all above ingredients (herbs and spices) except onion and coriander. And stir it for 3-4 Minutes.  Then add onion and coriander leaves.
  • Take a pan and Heat the oil for deep frying.
  • Wet your hand in cold water and take a little sized of mixture and roll it in your hand. Make a hole with help of thumb to give doughnut shape.
  • Gently release it in hot oil. Fry on medium gas on 2 minutes. be careful about doughnut shape when frying it.
  • Put on Kitchen paper when it becomes golden and crispy. Serve hot with Coconut Chutney and Sambhar.
