Rajasthani  Dal Bati Recipe

Serves – 5

Ingredients for Dal:

Ingredients For the Baties:

1/3 Cup Chana Dal(Split Bengal Gram)

1 Cup Whole Wheat Flour

1/3 Cup Toovar(Arhar) Dal

1/2 Cup Semolina(rava)

1/3 Cup Moong Dal(Split green Gram)

2 Tablespoon Besan

1 Tablespoon Urad Dal(Split black lentils)

1/2 Cup Millk

3 Tablespoon Ghee

4 Tablespoon Melted Ghee

3 Cloves

Salt to Taste

2 Bay Leaves

Ghee for Deep Frying

1 Teaspoon Cumin Seeds

 

A Pinch of Hing (Asafetida)

For The Topping:

1 Teaspoon Garlic Paste

4 Tbsp Melted  Ghee

3 Tablespoon Chopped Onion

8 Tbsp Finely Chopped Onions

3 Tablespoon Chopped Tomatoes

 

3 Teaspoon Chilly Powder

1/4 Tablespoon Tumeric Powder

 

1 Teaspoon Coriander Powder

 

1/2 Teaspoon Garam Masala

 

Salt to Taste

 

1 Tablespoon Chooped Coriander

 

Cook Dal

How to Make Dal?

  • Wash all dal and mix it. put 4 cups of water and salt in it and pressure cook for 3 Whistles.
  • Take a one bowl and mix chilly powder, tumeric powder,coriander powder and garam masala with 3 tbsp water and combine properly. Keep aside.

  • Take a ghee in a deep bottom pan and add the cloves, bay leaves, cumin seeds and asafoetida. When Seeds crackles, Put garlic paste and onion. Sauté on a medium gas for a 2 minutes.

  • Put Tomatoes and prepared masala paste, Combine properly. Sauté and stir for 2 minutes.
  • Put the cooked dals with water and little salt. Mix properly and cook and stir on a medium flame for 3 minutes.
  • Add the coriander and mix properly. Keep aside.

How to Make Bati?

  • Mix wheat flour, Semolina, besan and ghee. Knead with help of milk into a firm dough. Knead well for 5 to 7 minutes.
  • Divide the dough into equal portions and Flatten the rounds using your thumb to make an indentation in the center of the baatis.
  • Boil water in deep pan, Put all baatis into the boiling water and cook for 20 minutes overa high gas.
  • Drain and keep aside when baatis are done.
  • heat the ghee in deep pan, add 4 baatis at a time and Fry till they tun brownis in color from all sides.
  • Fry all baaties and Drain on a absorbent paper and Keep aside.
