Soft Gujarati Khaman Recipe

Ingredients for Making Batter :

1 Cup Gram Flour

2 Tablespoon Oil

1 Tablespoon Semolina

8-10 Curry Leaves

1 1/2 Teaspoons lemon Juice

1/2 Teaspoon Mustard Seeds

1 Teaspoon Soda bicarbonate

1/2 Teaspoon Sesame Seeds

1 Teaspoon Crushed Green chili-Ginger

4 Green Chilies

3/4 Cup Water

2 Tablespoon Chopped Coriander Leaves

1/4 Cup Yogurt

2 Tablespoon Grated Fresh Coconut

1 Teaspoon Oil

1 Pinch Asafetida


1/3 Cup Water

How to Make Khaman?

  • For preparing batter, firstly take a bowl and Add Gram flour, semolina, lemon juice, green chili paste, yogurt, water and salt in it. While you are mixing it please avoid lumps.
  • Heat a stream and grease a dish before placing it.

  • Add Soda bicarbonate in it and stir it in one direction for 1 minute. Pour Batter into grease dish and place it into streamer for 10-12 Minutes.

Khaman Dhokla Recipe

  • After 10-12 Minutes. Please check khaman is ready or not by using knife. Insert it and check if it comes out clean. If it does it is ready otherwise cook 2-3 minutes more.
  • Takeout the dish from streamer and let them cool for 2-3 Minutes. Cut into small squares of khaman dhokla.

How to Tempering to Khaman?

  • Heat oil in a small pan. Add Mustard Seeds and Asafetida. When seeds begin to crackle, Add sesame Seeds, curry leaves and green chilies.
  • Sauté them for few seconds.
  • Add sugar and water and bring it in boil. Let it cook for a minute in medium gas. Tempering is ready until each dhokla in coated well with tempering.
  • Garnish with coriander leaves and fresh coconuts. You can serve with green chutney.
