Vegetable Biryani Recipe

Serves – 2 – 3 Person

Ingredients for Rice:

1 Cup Basmati Rice

1 Chopped Potato

2 Green Cardamoms

½ Cup Chopped Cauliflowers

2 Cloves

¼ Cup Chopped Carrots

1 Cinnamon (Small Piece)

1 Sliced Onion

1 Small Bay Leaf

¼ Cup Chopped French Beans

Salt To Taste

½ Cup Green Peas

1 Tablespoon Cooking Oil

1-2 Green Chillies Cut Lengthwise

 

1 Tablespoon Garlic-Ginger Paste

 

4-5 Black Peppercorns

 

1 Green Cardamom

 

½ Tablespoon Cumin Seeds

 

¼ Tablespoon Garam Masala Powder

 

½ Tablespoon Turmeric Powder

 

½ Tablespoon Red Chilli Powder

 

1 Tablespoon Cumin-Coriander Powder

 

½ Cup Curd(Beaten)

 

2 Tablespoon Coriander Leaves

 

3 Tablespoon Oil

 

Salt To Taste

Making Rice

Instruction:

  • Take 1 cup of basmati rice and wash in water 2-3 times. Then dabble in water for 15 minute.
  • Take one deep pan and add ¾ cup water in it over medium flame. When it comes to bubble, Add 2 Green Cardamoms, 2 cloves, 1 Cinnamon (Small piece), 1 small Bay leaf, 1 tablespoon oil and salt. After that put Rice in it. Boil until rice grain is around 85% Cooked. Don’t overcook to the rice. We want to each rice to be fluffy and separate.

  •  Move cooked rice to the colander and remove excess water.

Vegetable Biryani

  • After that we want to make gravy. So first Heat oil in a pan over medium flame. Put ½ tablespoon cumin seeds in it. Add Onion, Aram chillies and ginger-garlic paste in it. Fry it until onion start to turns light brown.
  • Add potato, carrots and cauliflowers and Stir fry for 2-3 minutes. After Put French beans, green peas and salt. Mix properly and cook until all vegetables are almost cooked.
  • Add all spices (turmeric powder, red chilli powder, cumin-coriander powder and garam masala powder) in it. Cook for 2 minute.
  • Put beaten curd and coriander leaves in it. Mix well and cook for 2 minutes.
  • Add boil rice in it .Mix and fry for 5 minute. After that turn off the flame.
  • Vegetable Biryani is prepared and you can served it with curd and papad .
