Serves: 4 People
4 Medium Sized Capsicums
2 Large Potatoes
1 Medium Carrot
1/2 Cup Peas
1 Large Onion, Sliced
1 Tablespoon Cooking Oil
2-3 Cloves of Garlic
1 Inch Piece of Ginger
1 Teaspoon Red Chilli Powder
Salt as per Taste
1/2 Teaspoon Turmeric Powder
1 Teaspoon Coriander Powder
1/2 Teaspoon Garam Masala Powder
1/2 Teaspoons Dry Mango Powder
1/2 Cup Chopped Coriander Leaves
Pinch of kasuri Methi
Boil potatoes, peas and carrots carefully. Don't make them mushy.
Wash and deseed capsicums. Make Garlic and ginger paste.
Put oil in a pan and Add ginger-garlic paste.
Put onion and sauté until golden.
Add all spices and kasuri methi. Sauté for a Minute.
Put steamed veggies, coriander leaves and salt. Mash them to mix everything.
Stuff the capsicum with above prepared potatoes mix. Fry them in less oil. Cover with the lid. And cook them on a low flame.
Stuffed Capsicum is ready to be served.
