Gujarati Vaghareli Khichdi Recipe

Serves: 4 Persons






1 Cup Rice

1 Cup Yellow Lentil

1/2 Cup Green Peas

1.5 Potatoes, Peeled and Chopped

1 Carrot, Chopped

1 Cup Bell Peppers, Chopped

1 Cup Tomato, Chopped

1 Cup Cauliflower

1 Teaspoon Ginger, Chopped

2 Green Chili, Chopped

Salt to Taste

1 Teaspoon Turmeric Powder

1 Teaspoon Red Chilli Powder

5 Cups Water

4 Tablespoon Fresh Coriander


3 Tablespoon Cooking Oil

3 Tablespoon Desi Ghee

1/2 Teaspoon Mustard Seeds

1 Teaspoon Cumin Seeds

10 Pepper Corns

2 Bay Leaves

1 Inch Cinnamon

6 Cloves

2 Tablespoon Cashew Nuts or Peanuts

4 Dried Dried Red Chilli, Whole

1/4 Teaspoon Asafetida


Gujarati Vaghareli Khichdi Recipe

Soak Rice and dal in enough water for about 20 minutes after washing.

Put Pressure cooker over low flame. Heat oil and ghee in it. And add cumin and mustard. Wait till they start to crackle. After that add cloves, cinnamon, peppercorn, bay leaves and asafetida and whole red chili.

Now put all the chopped vegetables, Green peas, ginger, green chili and stir it for 5 seconds.

Mix all the seasonings and cashew or Peanuts in it and sauté for a minute.

Remove water from the soaked dal and rice and Put rice and dal in the pressure cooker and stir it for 4 seconds.

Now add 5 cups of water and close the cooker lid. Pressure cook for 3 whistles on medium Flame.

Let it cool down finally and then open the cooker and add fresh coriander and mix gently.

Serve hot with ghee on top and yogurt, papad and some pickle.
